Thick, sticky, sweet, hot syrup dripping off bananas, strawberries, and blueberries piled high over an inch of the fluffiest yumminess ever topped with a tower of whip cream. Belgian waffles. Saturday morning special. Toasted bagel with cream cheese with sliced avocado sprinkled with lemon pepper, with a side of berries and cheesy scrambled eggs. Afternoon snack, breakfast, dinner, dessert - this one is served all times of day. Farfalle pasta with sun-dried tomatoes, chicken, broccoli, olives, feta and parmesan cheese. A favorite week night one dish meal. These are just a couple of the favorite meals I make for my boys. What is your favorite special meal?
My mom and sister are such fabulous cooks, and they have completely different cooking styles. My mom is a recipe cook. That is, she always follows the recipe completely. But, after she makes it, she often will personalize it depending on how it was received. She will add or delete an ingredient if necessary. My mom usually cooks for 2-6 people unless she is throwing a Holiday party. My sister, on the other hand, used to cook regularly for large groups. She was the hospitality chair for her church and cooked for the congregation on Sunday. For years, she cooked three Sunday meals feeding about 500 people. During the week, she cooked for smaller groups of 10-20. She had help of course. But, her recipes were multiplied several times over. She used recipes as a guide, but never completely. Totally different styles, two fabulous cooks. But the one thing they had in common is that they always made a beautiful presentation. Meals were always served out of serving dishes and garnished with fresh herbs or fruit. Other posts will be dedicated to describing some of the most cherished meals my mom and sister prepared for me.
However, for now, I want to describe the most simple meal. The perfect egg mc muffin. No, this is not from McDonald’s. The best egg mc muffins I've ever had, have been prepared lovingly by my dad. I went to law school at Loyola Law School and lived at home in Glendale for the first two years. My dad was a recently retired partner at a prestigious law firm and still had extra time on his hands. I left almost every morning about 7am to beat traffic to get downtown to school. Every morning for 2 years, my dad would have a travel mug of coffee for me and a hot egg mc muffin ready for me. He always used Thomas’s brand English muffins and the eggs were always perfectly cooked and seasoned. It was a little different everyday as he would throw in whatever leftovers we had from dinner the night. It was amazing, and truly the most perfect balanced breakfast ever. It was a labor of love that I will treasure forever.
